This week's update on the garden is looking a little different. We're now into the good stuff and I can start sharing with you what our
bounty has looked like this week. I'm so excited that we're at the point where our garden is steadily producing fresh veggies. The peppers, beans and tomatoes are well on their way and should be ready within the next week to two weeks. Right now, there is an abundance of zucchini, so I apologize (or perhaps I don't) for the overflow of zucchinified recipes.
So, this week ... our garden gave us the following:
A 5.6 pound zucchini! Wowza!
A bunch of slightly smaller zucchinis and summer squash
4 cups of chopped summer squash for the freezer
26 cups of shredded zucchini to go in the freezer for future baking (plus 10 more for this week's baking)
A fresh green salad with lettuce from the garden
...as well as sauteed beet tops, and sausage and zucchini breakfast burritos that are not pictured (watch for the recipes next week).
God is good, all the time. All the time, God is good.

MMmmm.. those veggies look delicious. I have this vision of us someday trading decorating services for cooking! ;) Mash us together and the domestic success would be astounding! lol

I froze some strawberries last week per your instruction by the way :) I'm taking them out for next week so I'll let you know how they come out :)

I am definetly going to try the zucchini brownie recipe. My mom used to make zucchini chocolate cake and I have had all these intentions of making it, but I think I will start with your brownies. Brownies are never a bad thing in this house. ;)

Lucy, please don't think I'm a weirdo, but when I saw the photo of the zucchini in my bloglines, I thought it was a big gray fish! And I was like what on earth?? Glad to know it was a yummy zucchini instead. So glad that the weather has been so good for your garden. Gosh it will be so great in winter to eat some of that produce you have put away. Way to go you homemaking woman!
