Menu Plan Monday

We had a great time with the FD's family for Christmas this weekend. I'll be sure to post about it sometime in the next few days. For now, we're relaxing this evening. I'm watching Harry Potter and the Half-Blood Prince (Thanks, Sista) and listening to the FD snore like a freight train on the couch.

It's been a few weeks since I've done a formal menu plan. I have been a huge slacker lately. Things have been busy, we've been here, there and everywhere and throwing together last minute meals was just the way it needed to be. It turned out not so bad, though. We have enjoyed lots of tasty things.

This week we've got lots going on again and are hosting a few special meals here.

Sunday
Christmas Dinner Leftovers

Monday
Clean up the fridge
*Make Green Bean and Carrot Casseroles for FD's work Christmas Potluck

Tuesday
Out for our friend's son's 1st Birthday

Wednesday - company
Crab Rangdoon*
Phyllo Bites*
Brown Sugar Chicken*
Rice
Broccoli and/or Squash
Something for dessert

Thursday
Corn and Chicken Chowder

Friday - company
FD's Rotisserie Pork Tenderloin
Corn
Squash
Garlic Bread

Saturday
Our Very Own Christmas Dinner
Roasted Chicken
Wildrice Stuffing
Mashed Potatoes
Carrots
Green Bean Casserole
Rolls
Apple Pie

This will be my last menu plan for a few weeks. Next Sunday, I'll be heading to my hometown to help my mom get things prepared for the holidays and the FD will be joining me on Christmas Eve. We'll be away for a while and then will be enjoying some quiet holidays at home. I'll be back in the New Year ready to go in full force!

I just love muffins. I still cannot find my muffin tin so I'll be heading to Walmart to purchase a new one.
