It starts NOW

I am embarking on a major canning/preserving mission this weekend.

1. Zucchini Marmalade (interesting, no?)

2. Red pepper relish

3. Salsa

Next week, my mom is coming and we'll be making pickled beets, diced tomatoes, stewed tomatoes, roasted tomatoes and perhaps some more salsa.

Later in the harvest I'll be doing diced chilies, applesauce and apple butter.

I've already done pickles, peaches and peach plum marmalade.

For seasoned canners, this may not seem like a lot. But, I have never really done any of this (especially by myself). We'll see how it goes. I have this vision of a neatly stocked shelf in the cold room.

Pictures will follow.

Happy Saturday, loves.

Okay, I am NO seasoned canner. In fact, I have never attempted it at all. The prospect of what you're about to do just made me tired thinking of it. I'm SURE it will all be delicious though. I'll send my address, K? I accept gifts. ;) Tee hee hee!
Have a wonderful and productive weekend, Lucy.

I have never canned but would love to learn. Especially salsa because that is one of Zane's favorites. The peach plum marmalade sounds so good. Good luck!

You're so ambitious! I don't know a thing about canning but I wish I did! It sounds like such a smart thing to do with extra produce.

Go girl! If anyone can do it, it's you! I can't wait to hear how it all turns out (and tastes! Yum!)

Wow I'm impressed! And what a fun thing to do with your Mom too! We used to make plum preserves when I was younger because we have a plum tree in our yard, but it's been sooo long!

I would love to learn to really can. I make preserves, but just one or two jars at a time.

Have fun and let us know how that marmalade turns out!
