I don't even want to think about what happened with my menu planning last week. Seriously, I have to either go big or go home. I didn't sit down and write out my weekly menu on Sunday and it was mayhem. I only cooked once. Monday we grabbed Harvey's when we were out running errands. Tuesday I went to Spicy Thai with the girls from school and FD grilled a burger (this outing was planned so I didn't feel guilty about it). Wednesday I cooked (gasp!) turkey enchiladas and Thursday we grabbed take out on our way up north to the in-laws. Then we were at their place for the weekend, so I was off the hook. But as soon as I got home last night I decided it was time to get back on track and get a menu figured out for this week before I get completely derailed again.
So, without further ado - here it is.

Wednesday's dinner sounds so yummy! And, have you looked at the grilled potato recipe I linked on mine to go with your grilled steak later this week? I haven't tried it yet and was going to go with a baked potato but I came across it and it looks really easy and delicious. I'll have to let you know :)
For steak, I LOVE bottled Caribbean jerk sauce or teriyaki but I also make my own by mixing worcestershire sauce, lemon (or lime) juice, a bit of unsweetened cocoa powder (for a smokey flavor), and Grill Mates steak seasoning together. It's perfect for grilling but doesn't turn out the same on the stove. I always add citrus to my homemade marinade though because it adds something :)

We ended up having Rib Eye Steaks this week. I almost forgot that we had them.
